Can we all agree that 2020 has been a weird year? The sooner we get through it, the better. And now that it’s officially September, we’re more than ready to bring on a new season. Nothing says fall like pumpkin-spice everything, so we’re kicking things off with a cannabis-infused pumpkin muffin recipe we found over at The Cannabis Spatula. And guys — it’s a good one.

- 2 1/2 cups AP flour
- 1 1/2 tsp baking soda
- 1 1/4 tsp salt
- 1 1/4 tsp cinnamon
- 1 1/8 tsp nutmeg
- 3/4 tsp ground cloves
- 1/2 tsp ground ginger
- 1 1/2 cups sugar
- 3 tablespoons cannabis-infused oil
- 1/3 cup + 2 tablespoons vegetable oil
- 3 eggs
- 1/2 cup water
- 1 can (15 oz) pumpkin puree
Preheat the oven to 350 and line a muffin tin with paper cups. Combine flour, baking soda, salt, and spices. Separately, combine sugar, oil, water and eggs. Stir in the pureed pumpkin.
Add the pumpkin mixture to the flour mixture, stirring just until combined. Don’t over mix!
Divide the batter evenly into the muffin cups and bake 25 minutes or until a tester comes out clean. Cool in the pan for a few minutes, then remove the muffins to cooling racks.
